Crimson and dark purple with a lithe long fruit-driven palate–this drop loves a big glass and swirl. Pure magic paired with pan-fried salty and briny flavours, and aromatic herbs.
Ingredients
Pasta of choice (linguine, fettuccini or spaghetti work well)
2 cans crushed tomatoes (opt for the unseasoned variety)
4 gloves garlic, crushed
Onion, chopped
Dried Italian herbs
Chilli oil
Fresh parsley to garnish
Optional: Olives and anchovies for added flavour – we recommend these to bring out the flavour of the Pinot!

Recipe
Boil pasta in pot of water, let cook until al dente
While pasta is cooking
Sautee the fresh garlic and onion in olive oil
Once browned, add the crushed tomatoes–cook for 2 minutes
Add dried herbs, chilli flakes, chilli oil
Bring to a simmer, then lower the heat to simmer for 10 to 15 minutes
Drain pasta and add to sauce
Add olives and anchovies if desired. Stir through fresh parsley
Serve with crusty bread and Hither and Yon’s Pinot Noir!
